In-universe the only time her name is visibly "Green" without an "e" at the end, is hand written on the box of Emma's birthday cake in " The One With The Cake" (S10E04). Rachel, her boss and her colleagues must know how the name is spelled and if it was wrong they would have had the nameplate remade. The parents, friends and family all see the name tag and would have had it corrected if it were mistaken.
